The coffee is a darker roast of Prabhakhan farm coffee and offers new aspects of the originally excellent coffee bean, which we wanted to reveal and offer to be enjoyed especially by medium and darker roast coffee lovers.

High in the Western Ghats, Christopher and his partners grow a rare sub-variety of Arabica-Kent coffee tree. The pickers hand-pick only the ripe coffee beans during the three picking rounds. This meticulous handwork requires skill and time, but is essential to the realisation of a naturally processed speciality coffee. The coffee berries are picked when they are evenly ripe and then spread out in the sun to dry. During the drying process, the coffee bean ferments. Before drying, the farmer Kristopher carries out a further operation in which the picked berries are soaked overnight in water barrels. This is done to allow the coffee to ferment effectively. Incorrectly ripened or defective berries rise to the surface and are collected from the batch. Otherwise, the production process does not consume water or fossil fuels. The result is a high quality, aromatic and ecological coffee.

In this dark roast, the roasting is done slowly and moderately to preserve the coffee’s natural aroma. This coffee is ideal for filter extraction for the darker roast lover, but also for V60 or espresso extraction. Despite the name Dark Roast, there is something for the discerning aroma connoisseur, as in the light roast from the same estate. The darker roast offers softer acidity and a stronger coffee “body”, and is one of the Forest Roaster’s personal favourites.

The coffee is roasted with self-sufficient solar and wind energy and shipped by Co2-certified sea transport.
In Finland, the beans have travelled in a biofuel-powered vehicle. You can choose to have your coffee
packaged in a 100% compostable coffee bag with a label created from hemp and sugar cane material,
or in a printed recycled cardboard coffee bag. When ordering online, you can choose the grind suitable for your coffee equipment. Your coffee will keep fresh and taste best if you order your coffee as a bean and grind the coffee beans just before extraction.

Prabhakhan estate

Viljelijä Christopher Mathais viljelee kahviaan. Prabhakhan tilalla, korkealla länsi-Ghatin vuoristoalueella, Christopher partnereineen viljelee harvinaista Arabica-Kent kahvipuun ala lajiketta 1934.

Tila käsittelee Arabica kahvinsa natural prosessoinnilla. Laadukas ja onnistunut natural kahvi alkaa kahvin keräilijöistä, jotka keräävät käsin vain KYPSÄT kahvimarjat. Tämä on hidasta käsityötä ja vaatii yleensä noin kolme kahvinpoiminta kierrosta. Tämän vuoksi keräilyn kustannukset nousevat, mutta lopputulemana on aromaltaan upea ja myös ekologisempi kuppi kahvia.

Kahvimarjan poiminnan jälkeen marjat asetetaan kuivumaan aurinkoon, ensin korotetuille ”pedeille” 2-4vrk, jonka jälkeen kuivattaminen jatkuu maassa kentällä auringossa 4-8vrk. Kuivumisen lomassa tapahtuu kahvipuun siemenen, eli pavun, fermentoituminen, joka natural prosessoidussa kahvissa tapahtuu marjan omien nesteiden, sokereiden ja entsyymien toimesta, toisin kuin pestyssä kahvissa jossa fermentoituminen toteutetaan vesitankeissa, jolloin myös kuluu merkittäviä määriä vettä. Natural kahvia tuotettaessa ei käytetä vesivaroja tai fossiilisilla polttoaineilla toimivia pulppereita. Tämä tekee natural prosessoinnista merkittävästi ekologisemman tuotantotavan. Natural kahvi on luonnollisesti aromaltaan marjainen ja sitrusmaisen hapokas.
