Light roast 2/6 Filter, V60, AeropressBalmaadi Farm coffee grows in the jungle on the edge of Silent Valley National Park. The coffee farm is the highest speciality coffee farm in India. The farm has been growing Demeter and organic certified coffee for 25 years. The farming practices are 100% organic and the Demeter certification represents values beyond organic. Demeter certification means that the coffee has been grown using biodynamic methods. Biodynamic methods holistically take into account all the forces of nature. Demeter farms strive to be self-sufficient in their production. No commercial fertilisers or pesticides are used, even if certified organic. Vedic and biodynamic methods are constantly monitored and developed on the farm. Biodynamic farming and systems pre-date organic, and the organisation was at one time involved in the creation of the organic certification system, so it is natural that the older system is more holistic in its understanding and more advanced in its approach.
While visiting the farm, the Forest Roaster noticed that coffee trees are growing wild on the farm, with little or no intervention. The farm does produce self-sufficiently, using fermentation methods, also “pesticides” and fertilisers, which are used when necessary. Self-sufficiency is based on the diversity of life on the farm. This includes wildlife, plants, fruit trees, birds and farm animals such as cows, as well as cosmic energies. Many useful crops are left to feed the animals and are not exploited commercially.

The coffee is roasted with self-sufficient solar and wind energy and, exceptionally, in cooperation with the Rost coffee roastery in Helsinki, so that the costs of organic certification are not prohibitive for Metsäpaahtimo. The coffee is shipped by CO2-certified sea transport. In Finland, the beans have travelled in a biofuel-powered vehicle. You can choose to have your coffee packaged in a 100% compostable coffee bag with a label created from hemp and sugar cane material, or in a printed recycled cardboard coffee bag. When ordering online, you can choose the grind suitable for your coffee equipment. Your coffee will keep fresh and taste best if you order your coffee as a bean and grind the coffee beans just before extraction.
